This healthy recipe gives your power back to do your next activity. Sweet potato, which is rich in beta-carotene, is an antioxidant to fight free radicals.
Ingredients:
650 ml water
100 g tapioca
150 g + 1 tbsp sugar
1 tsp salt
6 pandan leaves
250 g sweet potatoes, steamed, peeled, mashed
100 g red tapioca pearls
500 ml thick coconut milk from a half coconut.
How to make:
1. Cook water, 50 g tapioca, sugar, ¼ tsp salt and three pandan leaves. Stir to thickening.
2. Mix sweet potatoes, 50 g tapioca, 1 tbsp sugar, ¼ tsp salt. Shape round like marbles. Boil to floating. Set aside.
3. Spoon the marble batter and tapioca pearls. Cook briefly.
4. Boil coconut milk, ½ tsp salt and three pandan leaves to boiling.
5. Serve Marble Porridge with coconut milk spray.
For eight servings.
